Among the best Seattle restaurants, Urbane is delightfully modern, approachable and relaxing.  Celebrating the beauty of the earth, Urbane welcomes you to an open space where natural materials exude elegant simplicity. Specializing in delicious Northwest cuisine served in a relaxed setting, Urbane dedicates itself to the philosophy of Executive Chef Greg Lopez: “Good food depends on good ingredients.” A native of Jersey, Lopez works with farmers across Washington and the Pacific Northwest who are dedicated to sustainable growing techniques and bringing the best product to market.

The menus at Urbane change to reflect the seasonality of ingredients including fish and shellfish native to the Pacific Northwest. Says Chef Lopez, “Preparations are traditional and simple allowing ingredients to complement each other without compromising how the food was intended to taste.” Chef Lopez selects the finest fresh foods from celebrated local Seattle resources that include Beecher's Cheeses, Uli's Sausage from Pike Place Market, produce from Willie Green Farms and Salumi Artesian cured meats from Pioneer Square.

True to our regional roots, the wine menu at Urbane exclusively showcases fine Pacific Northwest wines.  Our Seattle restaurant serves delicious Pacific Northwest water, sparkling or stilled, both purified in-house and poured from reusable carafes.

Urbane is situated within the pioneering Hyatt at Olive 8 – Seattle’s first LEED-certified green hotel.  The restaurant and bar are accessible from 8th Avenue or the hotel lobby of Olive 8, and for guests of Grand Hyatt Seattle, your bill can be charged to your room.  Our restaurant menus are available in Braille.

Blue C Sushi

Located in the lobby of Grand Hyatt Seattle, Blue C Sushi is a funky Seattle restaurant with a new twist on delicious food. See the food you want, take it off the belt, eat, stack your plates and press a button for service and check out. It's that easy to indulge in fresh Japanese cuisine, including five styles of sushi, teriyaki chicken, potato-wrapped shrimp, pork gyoza, yakisoba, edamame, katsu, tempura, salads, tofu with chili sauce, and spinach gomae.. Come by for our specialty Japanese cream puffs or just toenjoy our casual atmosphere. Bring a friend for drinks and order sake, wine, sake cocktails, regular cocktails, domestic, imported or Japanese beer or a variety of non-alcoholic drinks.

The Tasting Room & The Wine Cellar

The Wine Cellar and Tasting Room are private dining rooms located one floor below the main dining area of Ruth's Chris Steak House.  A mahogany bar, custom sconces, and wrought-iron chandeliers give an aura of European elegance as you descend into The Wine Cellar. Heavy wooden doors open into a cavernous room designed to look and feel like a giant wine barrel.  You’ll be fascinated by our trisected arched wooden ceilings, supporting staves, and suspended octagonal lanterns. Leather partitions enhance the atmosphere for intimate functions.

Enjoy three walls that are framed in natural rock, while the fourth wall separates the dining room from the wine collection.  Housed behind oversized glass doors to the right of the dining room, the extensive wine collection is comprised of full-flavored wines, all of which are featured on Ruth's Chris Steak House menu. The Wine Cellar seats up to 48 and the Tasting Room seats 24.
